Apfel--‐Zwiebel--‐Dip
3 Äpfel
2 Zwiebeln
250g Soja Creme oder Soja Joghurt
Salz, Pfeffer, Zucker, Zitronensaft
Die Äpfel in halbe Ringe schneiden, die Zwiebeln in dünne Scheiben.
Mit dem Sojajoghurt oder der Sojacreme mischen und mit den
Gewürzen abschmecken.
Marinade für Gemüsespieße
2EL Sojasauce
2EL Sesamöl
Chili
1EL Ingwer, fein gehackt
1 Zehe Knoblauch, fein gehackt
1 EL Zitronensaft
1 EL Zucker
1 EL Tomatenmark
Alles miteinander mischen
Das Gemüse mindestens zwei Stunden darin einlegen.
Vegane Mayonnaise
100 ml Sojamilch (ungesüßt)
1EL Weißweinessig oder Zitronensaft
1--‐2TL Senf,
Salz, Pfeffer
ca. 150ml Öl
Wichtig:
Alle Zutaten sollten dieselbe Temperatur haben.
Die Sojamilch mit dem Essig mischen und gerinnen lassen.
Anschließend Senf, Salz und Pfeffer dazugeben.
In einem Standmixer oder mit dem Pürierstab auf höchster Stufe mixen.
Das Öl langsam hineinlaufen lassen, bis die gwünschte Konsistenz erreicht ist.
Je stärker die Leistung des Mixers, desto weniger Öl wird benötigt.
Rote--‐Beete--‐Salat
1 Kg Kartoffeln (festkochend)
200 g rote Beete (eingelegt)
200g saure Gurken
2--‐3 säuerliche Äpfel
2--‐3 Zwiebeln
500g vegane Mayonnaise
Salz, Pfeffer, Essigwasser der roten Beete
Die Kartoffeln in der Schale kochen, pellen und vollständig abkühlen lassen.
Alle Zutaten in mundgerechte Stücke schneiden. Die vegane Mayonnaise hinzugeben
Und mit Salz, Pfeffer und dem Essigwasser der roten Beete abschmecken.
Marinade für Sojaschnitzel
Zwiebeln in Ringe schneiden, mit Ketchup
Und Senf mischen und Öl, Kräuter, Salz und Pfeffer
dazugeben. Mit etwas Agavendicksaft oder Zucker süßen.
„Aiersalat“
75g Nudeln
75g getr. Kichererbsen oder 150g Kichererbsen aus der Dose
1 mittelgroße Zwiebel
100g vegane Mayonnaise
Etwas Kurkuma für die Farbe
Salz(Kala Namak), Pfeffer
Die Nudeln weich kochen, ebenso die Kichererbsen, wenn sie nicht aus
der Dose kommen. Die Zwiebel sehr fein hacken. Die Kichererbsen mit einem
Stabmixer fein pürieren, Kurkuma hinzufügen. Die Nudeln grob mit pürieren
(sie sollen die Größe und Konsistenz von kleinen Stückchen hart gekochtem
Ei haben). Die anderen Zutaten hinzufügen und alles gut verrühren. Mit Salz und
Pfeffer abschmecken. Tipp: Wenn Sie Kala Namak – auch bekannt als Schwarz--‐Salz –
Statt herkömmlichem Salz verwenden, verstärkt das aufgrund des Schwefelgehalts den
Ei--‐Geschmack.
Linsenfrikadellen
250g braune Linsen
2 große Zwiebeln
2 Zehen Knoblauch
1 Bund Petersilie
2TL Kräutersalz
2TL Majoran
Senf nach Geschmack, Pfeffer
Die Linsen nach Vorschrift einweichen und gut abtropfen lassen.
Alle Zutaten durch den Fleischwolf drehen oder in einer Küchenmaschine pürieren
und in reichlich Fett braten. Sollte die Masse zu feucht sein, etwas Mehl untermischen
Couscous--‐Salat
250g Couscous/Bulgur|Quinoa
1 rote Paprika
½ Salatgurke und / oder 1 Zucchini
3 mittelgroße Tomaten
1 kl. Rote Zwiebel und 2 Knoblauchzehen;
alternativ:
Frühlingszwiebeln
Schale ¼ Zitrone
Ca. 6EL Zitronensaft
Salz und frisch gemahlener Pfeffer
5EL Olivenöl
1 Bund frische Petersilie
1 Handvoll frische Minzblätter
Den Couscous oder Bulgur oder Quinoa (glutenfrei)
Nach Packungsanleitung in Gemüsebrühe garen.
Achtung: Quinoa muss vorher mehrfach durchgespült werden.
Paprika, Salatgurke, Zucchini und Tomaten von Kernen befreien und
ganz fein hacken (3 mm Kantenlänge).
Ebenso werden Zwiebeln und Knoblauch ganz fein gehackt. Das Gemüse
mit dem Couscous, dem Olivenöl und Zitronensaft vermischen. Petersilie und
Minzblätter grob hacken und ebenfalls untermischen. Mit Salz und Pfeffer
abschmecken. Der Salat schmeckt besser, wenn er längere Zeit durchziehen
konnte.
LeberVurst
225g Kidneybohnen (= 1 kl. Dose)
1 Zwiebel
1 EL Olivenöl
100 g Räuchertofu (optional)
Majoran, Salz, Pfeffer
Frische Kräuter (Petersilie, Schnittlauch, etc.
Die Zwiebel in Olivenöl bei mittlerer Hitze goldgelb dünsten und abkühlen lassen.
Alle Zutaten bis auf die frischen Kräuter fein pürieren und mit den Gewürzen abschmecken.
Die Kräuter hacken und untermischen.
